Announcement of the third release of the 2023 vintage

This is an announcement about the third release of Yukikawa Brewery's 2023 vintage. This time, we will release one type of white wine and one type of rosé wine.

The Sauvignon Blanc was the one I had the most trouble brewing of the 2023 vintage, as I have just finished fermenting it (it turned out a little hard, but I am relieved that it turned out to be refreshing and nice), and the Rosato, which is in its third vintage and used a different brewing method that worked well to produce a well-made wine (I feel that this has greatly expanded the potential of Seibel 13053).

About this wine

The color is a pale lemon yellow with a slight beige tint.

The aroma is of hay that has been thoroughly dried in the sun, with citrus notes like Unshu mandarins and a soft, sweet scent like honey flickering behind it.

When you put it in your mouth, you will feel a comfortable, firm attack with just the right amount of acidity and a well-balanced taste, as well as a dashi-like, savory flavor and a faintly bitter aftertaste.

We recommend serving it at a slightly higher temperature (14-16℃).

Good pairings include sauteed chicken breast with ponzu sauce, kelp-cured white fish salad, and hijiki seaweed stir-fried with sesame oil.

About this wine

The color is slightly paler than previous vintages, a slightly orange-tinged garnet pink.

The aroma is soft with notes of pomegranate, strawberry and acerola, with hints of tangerine orange, apricot and loquat.

The taste has a refreshing acidity base with a rich, ripe, full-bodied fruitiness, and the aftertaste is a mild, refreshing umami flavor that lingers on for a long time.

We recommend serving it at around 12°C.

Good pairings include grilled pork with salt koji, persimmon and smoked salmon salad, Chinese cabbage and chicken hotpot with ponzu sauce, and mackerel with yuzu pepper potato salad.
